Pero existen muchas alternativas saludables, como el agar-agar, el kuzu y dem\u00e1s gelificantes que dan textura, aportan fibra y facilitan la digesti\u00f3n; las frutas en todas sus formas; los cereales, como los copos de trigo sarraceno hinchado y ma\u00edz o el arroz inflado, y las harinas de arroz o ma\u00edz\u201d, afirma Andr\u00e9s.<\/p>\n<p>La creatividad, el respeto por el origen natural de los ingredientes y la maestr\u00eda para sacar el m\u00e1ximo partido de cada elaboraci\u00f3n permiten a Andr\u00e9s crear postres de sabores limpios, sorprendentes, intensos y equilibrados que seducen a la vista, endulzan el paladar y cuidan tanto de nuestra salud como del planeta. \u201cNuestra pasteler\u00eda aporta al organismo las vitaminas y la fibra de la fruta. Adem\u00e1s, usamos mucha verdura, como la zanahoria, el boniato, el aguacate o los guisantes, y probi\u00f3ticos, como los nuevos yogures sin soja de coco, almendra o anacardos, aptos para veganos. Se trata de disfrutar de un postre dulce, pero con valor nutricional\u201d, a\u00f1ade Andr\u00e9s.<\/p>\n<p>El postre es la \u00faltima etapa de todo viaje gastron\u00f3mico y suele ser ese guilty pleasure que nos regalamos despu\u00e9s de cada comida, un toque dulce despu\u00e9s de lo salado. Pero con la reposter\u00eda natural y ecol\u00f3gica de SHA eliminas la culpabilidad de la ecuaci\u00f3n y te quedas \u00fanicamente con el placer, por lo que podr\u00e1s repetir postre y, lo mejor de todo, sin remordimientos. La receta de copos de guisante con aceite de coco y t\u00e9 matcha es buena prueba de ello. Andr\u00e9s nos explica c\u00f3mo prepararla: \u201cA\u00f1ade a los copos de guisante, que se venden ya preparados, como los de ma\u00edz, un chorrito de aceite de coco y t\u00e9 matcha para dar color, sabor y brillo. Coge dos mangos: corta uno en dados y, con el otro, haz un pur\u00e9. A\u00f1ade un poco de ralladura de lima, zumo de lima y clavo en polvo y m\u00e9zclalo todo bien. Despu\u00e9s, mete en un sif\u00f3n con un par de cargas de gas un yogur de coco y haz una mousse.
