A dish made with pasta and ratatouille, a <strong>delicious combination<\/strong>, great for those who want to <strong>take care of their diet<\/strong> without starving.<\/p>\n<p style=\"text-align: left;\"><!--more--><\/p>\n<p style=\"text-align: left;\">Pasta and vegetables are <strong>healthy foods<\/strong> that contain nutrients suitable for a <strong>healthy and balanced diet. <\/strong><\/p>\n<h3 style=\"text-align: left;\"><strong>Ingredients (4 people)<\/strong><\/h3>\n<h4 style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>For the Dough<\/strong><\/span><\/h4>\n<p style=\"text-align: left;\">Spelt flour 200 grs.<\/p>\n<p>Water 125 grs.<\/p>\n<p>Salt<\/p>\n<h4><span style=\"text-decoration: underline;\"><strong>Ratatouille Sauce<\/strong><\/span><\/h4>\n<p>Carrot 200 grs.<\/p>\n<p>Dry Onions 100grs.<\/p>\n<p>Green Celery  50 grs.<\/p>\n<p>Beet 30 grams.<\/p>\n<p>Bay leaf 1<\/p>\n<p>Some oregano<\/p>\n<p>1 Garlic clove<\/p>\n<p>Umeboshi Pasta  3 grs.<\/p>\n<p>Some Rice vinegar<\/p>\n<h4 style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>Vegetables<\/strong><\/span><\/h4>\n<p style=\"text-align: left;\">Carrots 100 grs.<\/p>\n<p>Red pepper 50 grs.<\/p>\n<p style=\"text-align: left;\">Zucchini 100 grs.<\/p>\n<p style=\"text-align: left;\">Dry onions 100 grs.<\/p>\n<p style=\"text-align: left;\">Extra virgin olive oil<\/p>\n<p>Salt<\/p>\n<h3 style=\"text-align: left;\">Preparation<\/h3>\n<h4 style=\"text-align: left;\"><strong><span style=\"text-decoration: underline;\">Mass<\/span><\/strong><\/h4>\n<p style=\"text-align: left;\"><strong>Mix the ingredients and knead<\/strong>, make sheets of 2 mm thick and make the tagliateli with a pastry cutter.<\/p>\n<h4 style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>Sauce<\/strong><\/span><\/h4>\n<p style=\"text-align: left;\"><strong>Cut vegetables into chunks and saut\u00e9<\/strong> with some oil (except the beet), cover with water and add the bay leaves and oregano. <strong>Cook for 15 minutes<\/strong> and add beets and the other ingredients, leave for 5 minutes and blend it all taking the bay lead before. Add salt.<\/p>\n<h4 style=\"text-align: left;\"><span style=\"text-decoration: underline;\"><strong>Vegetables<\/strong><\/span><\/h4>\n<p style=\"text-align: left;\"><strong>Cut all the vegetables into mirepoix<\/strong> <strong>and saut\u00e9 for 5 minutes<\/strong> with some oil, add salt and the sauce preparation, <strong>stir for 2 minutes and remove it from fire<\/strong>.<br \/>\n<strong>Cook the pasta for 6 minutes<\/strong> in boiling water, drain and add the ratatouille sauce.
