Today&#8217;s healthy recipe is made by the favorite food for many athletes and we talked about in an old post due to its<strong> amazing properties for health<\/strong>. This is<a href=\"https:\/\/pre.shawellness.com\/shamagazine\/en\/amaranth-the-food-of-gods\/\" target=\"_blank\" rel=\"noopener noreferrer\"> amaranth<\/a>, the main source of protein of Aztecs, Mayas and Incas, and one of the <strong>today\u2019s richest and nutritious foods<\/strong> of the Mexican cuisine. Enjoy this simple and delicious amaranth recipe and dare to include a Superfood to your culinary routine!<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients (6 servings)<\/strong><\/p>\n<ul>\n<li>Amaranth &#8211; 2 \u00bd cups<\/li>\n<li><strong>Avocado<\/strong> \u2013 3 pieces cut into small cubes<\/li>\n<li>Carrots &#8211; 2 pieces finely grated<\/li>\n<li><strong>Coriander<\/strong> &#8211; 1 handful of chopped leaves<\/li>\n<li>Lettuce &#8211; 1 piece<\/li>\n<li><strong>Radishes<\/strong> &#8211; 6 pieces thinly sliced<\/li>\n<li>Arugula &#8211; \u00bd bunch<\/li>\n<li>Lemon &#8211; \u00bd cup of squeezed juice<\/li>\n<li>Extra Virgin Oil \u2013 6 tablespoons<\/li>\n<li>Dijon mustard &#8211; 1 tablespoon<\/li>\n<li><strong>Palm honey<\/strong> &#8211; 1 tablespoon<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Place the amaranth in a bowl and wash it with water. Filter ir carefully to avoid loss of grains.<\/li>\n<li>Pour the amaranth in a big pot. Add 2,5 liters of cold water, add salt and let it <strong>boil over low heat for 30 minutes<\/strong> or until the corn is tender.<\/li>\n<li>Filter it with a strainer and wait.<\/li>\n<li>Mix the <strong>lemon juice, the mustard and the palm honey in a bowl. <\/strong><\/li>\n<li>Add salt, pepper, and olive oil and beat until blended.<\/li>\n<li>Use another bowl to <strong>place the carrot, culantro and radishes<\/strong>. Mix and season it with the dressing.
