Ingredients
Pastry:
- 2 cups whole wheat pastry or any other flour
- 1⁄2 teaspoon sea salt
- 1/2 cup coconut oil warmed
- Water
Filling:
- 8 cups apples, cut into chuncks
- Zest of an orange
- 1⁄2 cup maple syrup
- 1⁄2 teaspoon sea salt
- 1/4 teaspoon each cinnamon, nutmeg, and ginger
- 1/2 cup apple juice
- 1 tablespoon apple cider vinegar
- 2 tablespoons kuzu root dissolved in 3 tablespoons apple juice
Crumb Topping:
- 1/2 cup whole wheat pastry flour or part unbleached white pastry flour
- 3 tablespoons coconut oil warmed
- 1 1⁄2 tablespoons maple syrup
- 1 cup chopped pecans or walnuts
Preparation
- Preheat oven to 190 degrees C or 375F.
- Mix pastry ingredients starting with flours, salt and baking powder.
- Add the oil to the flour, and mix with fingers so that it resembles bread crumbs. Add enough water to create a moist dough. Roll out dough to fit a 9 inch (oiled) pie plate.
- Bake for 10-15 minutes.
- Place the apples, orange zest, maple syrup, salt, spices, juice and apple cider vinegar into a pan. Cover with a lid and bring to a boil on a medium flame.
- Cook for 10 minutes or until apples are soft but hold their shape. Stir now and again.
- Add the diluted kuzu and mix gently. When sauce has thickened remove from heat.
- Place the ingredients for crumb topping into a bowl and mix to form a crumbly texture. Transfer apples to pastry shell. Sprinkle crumb on top of filling.
- Bake until golden, about 20 minutes. Allow pie to cool before serving.
