Vegetable, Arugula and Avocado Surprise*
Ingredients:
- 2 cups arugula
- 1 cup butternut squash cut into bite size pieces
- 1 cup cauliflower cut into bite size florets
- 1 cup mushrooms cleaned and stems removed
- 1 tablespoon olive oil
- Pinch sea salt
- Handful of pomegranate seeds
- ½ avocado sliced
- Toasted black sesame seeds
- Black pepper (optional)
- I tablespoon of balsamic vinegar mixed with a squeeze of orange juice
Preparation:
- Arrange the arugula in a bowl
- Place the squash, into a pan.
- Add enough wáter to cover the bottom of the pan.
- Season with a sprinkle of sea salt .
- Cover and bring to a boíl. Simmer on a low flame for about 5 minutes.
- Add the cauliflower, mushrooms, and a tablespoon of olive oil.
- Continue to cook for another 5 minutes.
- Remove and allow to cool for a few minutes.
- Place on top of the arugula.
- Add the avocado slices, pomegranate, and sesame seeds.
- Drizzle with the balsamic orange mixture and serve.
